Quick & Easy Chicken Noodle Soup

Chicken Noodle Soup has long been touted as having healing properties, especially for upper respiratory infections. Primarily it helps thin secretions.  

Chicken Noodle Soup is a compilation of several ingredients, primarily the chicken broth. Homemade Chicken Broth takes time but is so much better than store bought. Check out my Recipe for Chicken Broth. After the broth has been made, it is just a matter of putting everything together.  This is a great one dish meal.

Ingredients for Chicken Noodle Soup

  • 8-10 cups Chicken Broth. If you are using store bought broth, use 2-2 ½
    32 oz tetra packs.
  • Diced or cut up whole cooked chicken or 2-3 pounds of cooked chicken breast

  • 12-16 oz packet of noodles or egg noodles, prepared according to directions on the packet. Due to egg allergies in our family, we generally use whole wheat pasta. My favorites are rotini and penne, but you can use any type.
  • 1 16 oz bag of mixed vegetables, sliced carrots, carrots and peas or whichever vegetables you’d like to add. (The picture shows a 2 lb bag, but I used half of it.)

  • 1 tsp pepper or to taste
  • 1 tsp salt or to taste
  • ½-1 tsp dried thyme, optional
  • 1 tbsp lemon juice, optional

Instructions for making Chicken Noodle Soup

  • Cook the vegetables in the microwave or stove top.
  • Put all ingredients together in 1 or 2 stock pots or dutch oven pots.

  • Bring to a boil.
  • Simmer for 10-15 minutes.
  • Add the cooked pasta during the last 5 minutes.
  • As with most soups, this will taste better after it has had time for the flavors to blend, but it can be eaten immediately.

Handy Tips

  • Add ½ tsp thyme and/or ½ tsp crushed rosemary for added flavor.
  • 1 tbsp lemon juice can be added 
  • Freeze half the soup for when you or a family member might have the flu or the sniffles.

  • We like to add hot sauce and more pepper after serving in individual bowls. If you are planning to freeze part of the recipe, keep it bland in case it is needed for a sick family member. At the time of eating, the spiciness can be increased as desired.
